Meal Plan: October 4th – October 17th


  • Friday: Take-Out from O’Reileys Irish Pub – Chicken & Fish Fry Dinners with French Fries, and Steamed Broccoli.
  • Saturday: Happy Birthday Elinor!
  • Sunday: Happy Baptism Layton!
  • Monday: Baked Italian Pasta with Mixed Vegetables and Chicken Sausage
  • Tuesday: Williams-Sonoma’s White Chicken Chili Starter and Spicy Beef Quesadillas
  • Wednesday: Chopped Ranch Salad with Macaroni and Cheese with Steamed Broccoli
  • Thursday – Monday – Off to NOLA!
  • Tuesday: Take-Out Pizza from Falbo Brother’s
  • Wednesday: Meg’s Harvest Salad with Pan-Seared Chicken Breasts – Coming off 6 days of travel and fun in NOLA, we’re in need of some detox, and I’m not just talking about booze. While I know we didn’t go crazy with the over eating, and we walked about a billion miles, I still know we need to get back to “real” food. This salad is fantastic, and Jim reminded me it was his favorite. I think I’ll have to keep the dressing on hand for whenever the craving strikes.
  • Thursday: Cheesy Pearl Couscous with Roasted Broccoli – This was delish, but the ratios seemed off, and we ended up with a porridge consistency that looked nothing like the picture and more like something Oliver Twist would have ask for more of. Again, the flavor was good, so I might use a different shaped past next time, maybe shells, and let that hold the cheese sauce.
