Meal Plan – September 29th – October 5th

  • Saturday –Dinner: Baked Tilapia Fingers, Sweet Potato Fries, and Veggie Plate


  • Sunday – Dinner: Grazing while Jim & Carter watch the Packers


  • Monday – Dinner:
    Shrimp with Spicy Garlic Sauce, Peppers, and Sugar Snap Peas over White Rice – Really liked this, but I used 1 TBSP Sriracha in place of the “chili sauce” and it still had a little too much kick, even for us. Would reduce next time and/or use Thai Chili Sauce, which, now that I think about it, is probably what they meant in the first place.


  • Tuesday – Dinner: Alice Springs Chicken with Steamed Broccoli, and Mashed Potatoes – Awesome. This was a great balance of tangy, sweet, salty, and just plain delicious. Although there is time in marinating the chicken, that shouldn’t be done much more than 3 to 4 hours ahead, the actual dish comes together quickly.


  • Wednesday – Dinner: Chopped Caesar Salads, Fusilli with Artichoke Hearts & Parmesan Cream, and Garlic Bread – This was okay, but I didn’t love it like I was hoping. Would probably cut recipe down and serve as a side-dish with some simply prepared chicken or shrimp.


  • Thursday – Dinner: Pigs in a Blanket and Sweet Potato Fries – Carter had a rough day, so I let him pick dinner. Jim was not disappointed in the least. Should probably give a shout out to the Kirkland hot dogs I picked up from Costco. They are all-beef deliciousness, which is good, because there are still 4 dozen left in


  • Friday – Dinner: Taco Pizza – Really liked how this turned out. I used the Pillsbury pizza crust, and pre-baked it for about 5 minutes before topping with pureed black beans and the rest of the toppings. Would make a great appetizer as well if cut into smaller pieces.


  • Other Cooking & Baking: Banana Muffins with Dried Cherries, Pecans, & Mini-Chocolate Chips
