This recipe, from My Baking Addiction, was a quick and tasty addition to our lunch of potato soup on a cold and lazy Sunday afternoon. It more than lives up to its name, as it took all of 5 minutes to throw together. The flavor is changed based on the type of beer you use, so feel free to have some fun with what you have in your home bar, I used a Pumpkin Lager from Lake Front Brewery, but if all you’ve got is Miller Lite, that’s fine too.
- 3 cups Self-Rising Flour
- 1/3 cup Sugar
- 1 tsp Kosher Salt
- 12 oz Beer
- 2 Tbsp Butter, melted
- Preheat the oven to 375⁰.
- Butter an 8×4 inch loaf pan and set aside. In a large bowl, combine the flour, sugar, salt and beer; mix well. The mixture will be sticky.
- Pour into the loaf pan and bake for about 55 minutes.
- At the last three minutes of baking, remove from oven, brush the top of the loaf with the melted butter and return to oven for the final three minutes of baking.
